Ingredients:

  • 10-pound prime rib roast (bone-in or boneless)
  • ½ cup horseradish mustard
  • 2 tablespoons Worcestershire sauce
  • 4 cloves garlic, minced

Step-by-Step Instructions

Step 1: Preheat the Smoker

Fire up your favorite smoker and preheat it to 225°F (107°C). For the best flavor, use a hardwood like oak or hickory—they’re perfect for beef and will infuse the roast with a rich, smoky aroma.

Step 2: Trim and Season

While the smoker heats up, prepare your prime rib. In a small bowl, combine the horseradish mustard, Worcestershire sauce, and minced garlic. Slather the entire roast with this mixture, making sure it’s well coated. Then, generously season with Salted Perfection Manhattan Select Blend to create a flavorful crust that seals in the juices.

Step 3: Smoke the Prime Rib

Place the seasoned prime rib directly on the smoker grates, bone side down. Close the lid and smoke until the internal temperature reaches:

  • 120°F (49°C) for Rare
  • 125°F (52°C) for Medium Rare
  • 130°F (54°C) for Medium

This will take around 4-5 hours, depending on the size of your roast. Use a meat thermometer to monitor the temperature for precise doneness.

Step 4: Rest the Roast

Once the roast reaches your desired temperature, transfer it to a cutting board. Cover it loosely with aluminum foil and let it rest for 20 minutes. This helps the juices redistribute, making each slice more succulent.

Step 5: Sear for a Perfect Crust

While the roast is resting, increase the temperature of your smoker to 400°F (204°C). Once it reaches temperature, place the prime rib back on the smoker. Sear until the internal temperature reaches:

  • 130°F (54°C) for Rare
  • 135°F (57°C) for Medium Rare
  • 140°F (60°C) for Medium

This step creates a beautiful, crispy crust while keeping the inside juicy and tender.

Step 6: Rest Again and Serve

Remove the prime rib from the smoker and let it rest for another 15 minutes before slicing. This final rest ensures every slice will be perfectly juicy.
